CBZ aka Chicken, broccoli and Ziti

The best weeknight meal, period. This was a childhood favorite and it continues to be our go-to weeknight meal. Whether you make it with ziti, penne or rigatoni, it will always be called CBZ in our house.

Ingredients

  • Chicken broccoli and ziti (regardless of pasta shape it will always be CBZ to me)
  • 2 boneless skinless chicken breasts, cubed
  • 1 large head of broccoli, cut into florets
  • 1 lb of short pasta, such as ziti, rigatoni or penne (I like a pasta with ridges because the sauce clings to it better)
  • 4 tbsp butter
  • 4 tbsp olive oil
  • 1/2 cup flour
  • 1 heaping “eating” tablespoon or 2 baking tablespoons of @lawrysseasoning Seasoning
  • 1 regular “eating” tablespoon or 1 baking tablespoon of garlic powder

Steps

Bring large pot of water (seasoned with salt) to a boil. In the meantime, cube the chicken and cut the broccoli into florets.

In a large plastic bag mix flour, lawrys and garlic powder. Feel free to taste it to make sure it’s seasoned to your liking.

Add broccoli to boiling water and cook for 3 minutes. Remove and set aside. Keep water boiling.

Heat large skillet over medium heat. When hot, add butter and oil. Add chicken to seasoned flour and shake until each piece of chicken is evenly coated. Add directly to pan with butter and oil. (Add pasta to boiling water around this time.)

When chicken starts to brown and looks cooked around the edges, flip (about 3-4 minutes). Cook all the way through. If the chicken cooks before the pasta then turn off the heat and set the pan aside. When the pasta is cooked, reserve 1/2 cup or so of pasta water and then drain. Add chicken with reserved butter and oil and the broccoli to the pasta. Toss, toss, toss! If mixture is dry, add a little bit of pasta water and continue stiring. Serve immediately or set aside until ready to eat. Add more lawrys for seasoning if needed. I enjoy mine with the shitty not-at-all fancy, powdery “parm” cheese from the grocery store! Enjoy! This one is a winner!!
