Chili

You’ll notice that most standard beef chili recipes typically have similar ingredients; ground beef, chili powder, tomatoes, etc. I find that the key different between a good chili and a great chili, is all to do with cooking technique. If you take the time to brown and caramelize your meat, bloom your chili powder and sauté the tomato pasta, you will have the most complex and luxurious bowl of chili.

My chili is inspired by Geoffrey Zakarian’s Game Day Chili. I add 2 cans of red kidney beans to mine and I don’t get too fussy about the multiple types of hot sauces. I can never find whole fire roasted tomatoes, but i find that diced (fire roasted or not) comes out equally delicious.
